The Vegetable Fairy

The vegetable fairy came to work again today.

One of Highland's instructors sells vegetable he grows. They sell at local farmers markets and venues like that. He also brings them to work to sell.
What could be better? nice, fresh vegetables delivered to my desk?

The last few times, he's brought them, I've been away from my desk for some reason or another. When I return, Poof! the Vegetable Fairy has been here!


This is the assortment I received today. Don't they look great? Steamed fresh green beans are one of my favorite foods.

OKRA HELP NEEDED
John is bringing me okra on Thursday so here is where I'm looking for help....

Do you have a favorite okra recipes you'd be willing to share?
Do you have any tips on how to prepare it?
How do you like to fix it?
Do you have to peel it?
Do you chop it?

I've eaten deep fried okra, stewed okra and okra in soups but have never made it myself.

Can you find it in your heart to help a poor, okra-impaired cook???

  1. Oh Lori okra is the best! If you want it fried slice it up, put it in a ziplock bag in the fridge overnight, then take it out the next day and it will be nice and moist. I use corn meal mix and just pour it into a bowl, dump the okra in and stir it around with my hand until each piece is coated. Then fry in a little oil. For stewed, which is also wonderful, saute a little onion in some oil, add chopped tomatoes and sliced okra and let it simmer till the crunch is gone from the okra. My husband's mother always boiled the tiny okras because they're the most tender, drained them, added salt and pepper and a splash of vinegar. They are delicious like that. And of course you can cook purple hull peas and add whole okra the last few minutes. I love summer vegetables! Blessings, marlene

  2. Hi there veggie lover. Yours looks great. I'm a small time gardener who loves fresh veggies. Here's a recipe from my grandma:
    Chop a cup of okra, 1 onion, garlic (optional but I like it), 1 squash...all chopped. In a large sauce pan 1 tablespoon of oil, butter or whatever; heat and add chopped items; cook about 5 minutes then add 1 large can of "stewed tomatoes"...simmer for 20 minutes or so. While that's going, whip up a pan of cornbread and you've got yourself a meal or two. Take care and have a great weekend.

    I'll help, but only if you'll let me come and help you eat it! tee hee
    I take a gallon ziploc bag, put in a scoop of cornmeal, and a little salt and pepper. I wash the okra and slice it thin, then dump the wet okra in the bag and shake it up. I either deep fry in my Fry Daddy or in a skillet.
    YUM!!
